Flat Rock Cellars 2020 Sparkling Twisted
Location: 2727 Seventh Ave, Jordan Station, ON
The newest Flat Rock Cellars addition to the Twisted Family! This fizzy favourite is a Riesling-dominant blend bringing vivacious fruit on the nose and zippy acidity with a dry finish on the palate.
It is made with 98% Riesling, 1% Chardonnay,1% Gewürztraminer and is just slightly over 10 g/L sugar at 12 g/L sugar.

Cave Springs Blanc de Blancs Sparkling Wine
Location: 5-3836 Main Street, Jordan
This Cave Springs Blanc de Blancs is made entirely from Chardonnay grapes, which are grown in limestone-clay soils along the benchlands of the Niagara Escarpment. Vinified in the Traditional Method, it was fermented and aged sur lie in a bottle for a minimum of 30 months prior to disgorging.
I got flavours of citrus, pear, apple, and some brioche notes. We paired this sparkling with this delicious gluten-free/keto savoury cheese tart (recipe to come).
This sparkling would be a great pairing with most Super Bowl Sunday goodies.
This sparkling has only 4 g/L sugar.

Fielding Estates Traditional Method Sparkling Brut
Location: 4020 Locust Lane, Beamsville, Ontario
The grapes are picked by hand and gently pressed in fractions. The clear juice was fermented at cold temperatures in stainless steel. Based on the 2014 vintage the “Cuvee” was blended, with wines dating back to 2009. The blend was then cold stabilized and sterile filtered. Secondary fermentation took place in the bottle and was aged on its lees for 30 months before riddling and disgorging.
This Traditional Method Sparkling Brut is a blend of 63% Chardonnay and 37% Pinot Noir.
I got flavours of green apple, citrus, and some brioche. It was delicious with our charcuterie board.
It has 7 g/L of sugar and 12% alcohol.

Two Sisters LUSH Sparkling Rosé

This Two Sister’s LUSH Sparkling Rosé was awarded National Trophy – Best Canadian Sparkling and Best in Class – Canadian Rosé at the 2021 Champagne and Sparkling Wine World Championships, in addition to a prestigious Gold Medal. The competition is the most respected, comprehensive, and rigorous international sparkling wine competition in the world.
This is a pretty pint bubbly made with Pinot Noir, Chardonnay, and Cabernet Franc. I got flavours of citrus, raspberries, strawberries, and cranberries. This sparkling wine has 8 g/L of sugar. Available for purchase directly at the winery or order online.
Perfectly paired with these briny oysters from New Brunswick.

Westcott Brilliant Sparkling Wine
Location: 180 Seventeenth St, Jordan Station, ON
This sparkling wine is made in the traditional French Champagne method and has 30 months of lees contact. The blend is 66% Pinot Noir and 33% Chardonnay with 8.4 g/L residual sugar.
I got flavours of citrus, apple, and some toasty notes.

Henry of Pelham Cuvée Catharine Brut VQA
Location: 1469 Pelham Rd, St. Catharines, ON
This Henry of Pelham Cuvée Catharine Brut VQA is named in memory of Henry’s wife, widow, and family matriarch, Catharine Smith.
It is a blend of 70-80% Chardonnay and 20-30% Pinot Noir and a small percentage of the Chardonnay is barrel fermented. There is secondary fermentation in the bottle followed by the aging of up to 36 months on lees.
We enjoyed this sparkling today with brunch. I’m getting flavours of citrus with some nut and brioche flavours.
This sparkling Brut is only 9.2 (g/L) sugar. You can pick it up at the LCBO #217521 and at the winery.

Tawse Spark Sparkling Wine
Location: 3955 Cherry Ave, Vineland, ON
This Tawse Spark sparkling wine is made in the Traditional method from 100% Pinot Noir grapes and has been on lees for 6 years.
The Pinot Noir grapes come from 15-year-old vines of the Laundry Vineyard.
I got flavours of citrus, and apple along with some nutty and brioche notes.
We enjoyed this with baked brie and some pâté.

Château des Charmes Brut Sparkling Wine
Location: 1025 York Rd, St. Davids, ON
This Château des Charmes Brut is a classic blend of Chardonnay and Pinot Noir made in the traditional method. This sparkling has been bottle-aged on lees (yeast) for a minimum of one year.
I found this sparkling to be slightly creamy with flavours of lemon as well as some brioche notes and it only has 8.6 g/L sugar.
We enjoyed this sparkling with an assortment of Canadian cheeses.

Jackson-Triggs Entourage Grand Reserve Brut Sparkling
Location: 2145 Niagara Stone Road, Niagara-on-the-Lake, ON
Continuing on my discovery of Ontario sparkling wines with Jackson-Triggs.
This Jackson-Triggs Entourage Grand Reserve Brut Sparkling 2016 is made with a blend of Chardonnay (49%), Pinot Noir (47%), and Pinot Meunier (4%). It is whole-bunch pressed, followed by aging on lees (‘sur lie’) for 2.5 years.
I got flavours of lemon, apple, almond, vanilla, and toasted brioche. This sparkling has a sugar content of 9 g/L.

We enjoyed this with a delicious cheese plate.
